Blueberry Oat Muffins (glutenfree)

I love blueberry's ánd muffins. So... the best is a combination of them both!
Since my boyfriend has celiac I mostly make them gluten-free and I don't taste any difference.

The muffins are soft and fluffy inside, but the topping makes it a bit crunchy. Jam Jam!


This is a great recipe to make on a 'sweet' and lazy sunday (or just whenever you crave for something sweet and tasty)!

What ingredients do you need?

Muffins (12-14 pieces) 40 minutes
Uncooked oatmeal (gluten-free) 102 gr
Flour (gluten-free) 162 gr
Sugar 50 gr
Baking powder 1,5 tbsp
Salt 1 tsp
Milk 240 ml
Egg 1
Oil60 ml
Fresh or frozen blueberries 130 gr



Topping
Sugar 2 tbsp
Cinnamon 2 tsp


Instructions

Preheat the oven to 218 °C.


Combine the oats, flour, sugar (50 grams), baking powder and salt in a bowl (bowl #1).


Combine the milk, egg and oil in another bowl (bowl #2). You can stir it a bit.


Add bowl #2 to bowl #1 and mix until moist only; do not beat!


Fill the (greased) muffin cups 2/3 full.


Mix the ingredients for the topping together and sprinkle these over the muffin batter.


Bake the muffins for 20-25 minutes.

Tips

  • I love XXL muffins with this recipe!
  • Dont hesitate to add a bit less or (even better) more blueberry's!
  • If you make smaller muffins, check your oven after 15 minutes. Just to be sure.
  • If you want to make this non-gluten-free, use 1 tbsp baking powder instead.
